Snackage by Moo -- Lychee Ginger Salad

One my favorite foods is the rambutan fruit. It is related to the Lychee. When I go to China in May, there is plenty of rambutan to eat, but here in the USA, they are a rare find. So whenever I have a craving, I find the closet Asian grocer and buy fresh lychees that become the base of my favorite salad. Not only is it beautiful to look at, but my ginger miso dressing makes it a mouthful of scrumdelish!
